Nigella's Mother in-law Madeira Cake ~马德拉蛋糕

It;s Bake Along time again. This round Bake Along #79 event is baking My Mother-in-law's Madeira Cake. This recipe is from the book of How to be a Domestic Goddess by Nigella Lawson or here. So you know it is her mother-in-law. It is interesting, isn't it? To find out how does this interesting cake taste like? i have to bake one.
This cake has a firm, yet light texture. It is nice to eat with tea and it is traditionally flavored with lemon. It is a sponge cake in traditional English cookery. (want know more about the history of this cake here

I baked 2/3 of the original recipe to suit a slim, long loaf tin that i have. I am glad that the cake turn out so well. Happy~ ^_^ ~

香喷喷呀!! 马德拉岛蛋糕好好吃!虽然是命名为马德拉岛蛋糕但这蛋糕不是来自马德拉岛。
是来自葡萄牙,通常做成长条状。 19世纪蛋糕造成后,传统都是以马德拉酒同奉上,但现在则用茶。 蛋糕是类似一款简单的磅蛋糕。组织幼细,松而富有浓郁的奶油和柠檬香气。


My Mother-in -law's Madeira Cake
Recipe adapted from How To Be a Domestic Goddess or here
makes 1 loaf (i scale down to 2/3 from the original portion for my 27cm long x 23 cm width and 3 cm height loaf pan)

Ingredients:
180g unsalted butter, at room temperature
105g castor sugar
grated zest and juice of 1/2 a lemon (wash with some salt to get rid of the wax)
2 'B' eggs
158g self raising flour (i don't have self raising flour; i added 2 tsp baking powder to 158g plain flour)
68g plain flour

To Do:
  1. Buttered and lined a loaf tin. 
  2. Cream butter and sugar, and add in lemon zest.
  3. Add in eggs, one at a time, with a tablespoon of flour for each.
  4. Then gently mix in the rest of the flour and finally the lemon juice.
  5. Sprinkle with castor sugar (i used 1 tablespoon only) as it goes into the oven and bake for 1 hour or until the cake-tester comes out clean.
  6.  Let the cake cool on wire rack, before turning it out.

做 一条长条蛋糕 (蛋糕模的size 27cm x 23cm x 3cm)

材料:

180克 牛油,室温
105克 幼糖
2 蛋 (我用B蛋)
1/2 柠檬的汁和屑
158克 自发面粉 (我用158克低筋粉加2茶匙发粉)
90克 低筋面粉

少许幼糖 (撒面用)(我用了1 汤匙)

做法:
  1. 预热烤箱170度。 把粉类过筛,备用。
  2. 把牛油和糖打发,加入柠檬屑。
  3. 加入蛋, 一粒蛋,一汤匙粉拌均匀。再一粒蛋,一汤匙粉,拌均匀。然后用汤匙分次把粉类加入拌均匀。
  4. 最后拌入柠檬汁,混合成均匀的面糊。
  5. 倒入一扑上烘焙纸和抹上牛油的长条模型烤盘。在面层撒上幼糖。
  6. 送入烤箱,以170度烤60分钟或至蛋糕表面金黄色就可以了。

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious.
